Pumpkin Cranberry Chocolate Chip Bar

Baking with protein powder is trial and error but when you nail it, you nail it! My Pumpkin Cranberry Chocolate Chip Bars are made with vanilla Casein powder which is a slow digesting protein powder so it keeps you full longer. These bars have about 40 g of carbs in each bar and I eat them as my post workout meal but they would be great for an easy breakfast or you could cut them into smaller portions and use them as a sweet tooth fix!

Pretty simple ingredients and little effort needed to pull these moist, Thanksgiving tasting dream bars together! Use a large bowl, whisk and spatula and a tinfoil pan if you want to do less dishes! Preheat your oven to 350 degrees. These bars take about 30-35 minutes to bake but I’ve cooked them less/more and they still taste good, just changes the amount of doughy-ness!

Ingredients & Instructions:

1 cup of Almond Milk (unsweetened)

1 cup of liquid egg whites

1 can pure pumpkin puree (not pumpkin pie filling)

1-2 TBSP pumpkin pie spice (I make my own with cinnamon, ground ginger, nutmeg, and ground cloves)

8 scoops Vanilla Casein Powder

1 cup dried sweetened cranberries

1/2 cup old fashioned oats

1/4 cup mini semi-sweet chocolate chips

In a large bowl mix the first three ingredients together until smooth then add in the spices. Add the protein powder and whisk thoroughly until all clumps are out. Then fold in with a spatula the oats, cranberries and chocolate chips. Spray an 8×11 baking dish (or tinfoil) with non-stick cooking spray then evenly spread the batter in it. Bake for 30-35 minutes or until center no longer jiggles. Cool then cut into 6 even portions for the following macronutrients: 290 calories ~ 39.6 g carbs ~ 5.3 g fat ~ 23.1 g protein

Healthy Eats: Peanut Butter Chocolate Brownie

There are few flavors as satisfying as the peanut butter and chocolate combination. These delectable brownies are made with Peanut Butter Chocolate Casein Protein Powder and stay very moist with good texture thanks to the applesauce and addition of salted peanuts. Then for extra deliciousness, top the brownie with 1 TBSP of all natural peanut butter. The nutritional facts below include the addition of the peanut butter topping. Enjoy!

Ingredients:

1 cup egg whites

1.5 cups unsweetened almond milk

1/2 cup unsweetened applesauce

4 scoops Protein Powder

2 TBSP coco powder

To add to top of each brownie when its time to eat:

1 TBSP dry roasted peanuts -salted or unsalted is fine and you can crush them or leave them in whole pieces

1 TBSP all natural peanut butter (to add to top of each brownie when its time to eat)

Directions:

Preheat oven to 350 degrees. In a large mixing bowl, combine egg whites, almond milk, applesauce and peanut butter with a whisk. Then add in coco powder and casein powder until well blended. Next, spread batter into 8×11 baking dish or tinfoil pan if you prefer to not do dishes like me! Bake for 25-30 minutes then let cool. Cut into 8 equal (ish) portions and wrap in plastic wrap. Top each brownie with 1 TBSP all natural peanut butter and 1 TBSP crushed or whole peanuts when it’s time to enjoy. Can be frozen if you want to make a double or triple batch.
